I don't get your point. Many people dual boot their Windows pc because they enjoy using Linux, but sometimes (maybe for work, maybe for some specific programs) they need to use Windows. Microsoft Edge is a trash piece of software. Even Windows users tend to use Chrome/Firefox over Edge. You're telling me that sometime in the future someone will ever use Edge on Linux, it's purely non-sense.
Microsoft doesn't love open source at all. They're just trying to look cool for open source community. If they actually loved open source and Linux they would've done a version of Office for Linux.

Because Edge is set as the default app to edit PDF files, those people just don't know how to change it or don't want to
